Soup-er Saturday



Chicken Fiesta Soup

1 jar salsa
1 can corn
1 can black beans
1 can low-fat, refried beans
1 can chicken broth
1-2 c. cooked chicken

Drain corn and black beans (rinse the beans too). Combine all ingredients stirring well to combine chicken broth and refried beans. Heat and serve. Serve with shredded cheese, sour cream, and tortilla chips or cornbread.

Since this recipe is so easy, I often buy a rotisserie chicken and make 2 or 3 batches at once. One pot to eat and 2 to freeze!
